Description

A hearty dish featuring flavorful chicken meatballs served with orzo pasta.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1/2 cup spinach, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, breadcrumbs, Parmesan, basil, egg, garlic, salt, and pepper.
  3. Form the mixture into meatballs.
  4. Place meatballs on a baking sheet and bake for 20 minutes.
  5. In a pot, bring chicken broth to a boil.
  6. Add orzo and cook for 8-10 minutes until tender.
  7. Stir in diced tomatoes and spinach.
  8. Add the meatballs to the pot and simmer for 5 minutes.
  9. Serve warm and enjoy.
