Ingredients

- 2 pounds potatoes
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 cup parsley, chopped
- 1/2 cup green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Boil the potatoes until tender. Drain and let cool.
- Peel and dice the cooled potatoes.
- In a bowl, mix olive oil, lemon juice, salt, and pepper.
- Add the chopped parsley and green onions to the potatoes.
- Pour the dressing over the potato mixture.
- Toss gently to combine.
- Chill in the refrigerator before serving.
