- 4 bell peppers
- 1 pound ground turkey
- 2 cups fresh spinach, chopped
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, cook ground turkey over medium heat until browned.
- Add spinach, cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove foil and top with cheese.
- Bake for an additional 10 minutes until cheese is melted.
Notes
- Use any color bell peppers you prefer.
- Feel free to add other vegetables to the stuffing.
- This dish can be made ahead and reheated.
