A fresh and healthy tomato zucchini pasta dish.
Ingredients
Scale
- 2 medium zucchinis, spiralized
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté for 1 minute.
- Add cherry tomatoes, salt, and pepper. Cook for 5 minutes.
- Add spiralized zucchini. Cook for another 3-4 minutes until tender.
- Remove from heat. Stir in fresh basil and Parmesan cheese.
- Serve immediately.
Notes
- Use whole wheat pasta for added fiber.
- Can substitute Parmesan with nutritional yeast for a vegan option.
- Adjust seasoning to taste.
