Grilled tofu vegetable kabobs are a healthy and delicious dish, perfect for summer barbecues.
Ingredients

- 1 block firm tofu, pressed and cubed
- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
- Add tofu and vegetables to the bowl and toss until coated.
- Thread tofu and vegetables onto skewers, alternating each.
- Place skewers on the grill and cook for 10-15 minutes, turning occasionally.
- Remove from grill and serve hot.
Notes
- You can use any vegetables you prefer.
- Soaking wooden skewers in water for 30 minutes prevents them from burning.
- Serve with rice or a salad for a complete meal.
