A refreshing Thai quinoa salad packed with flavor.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup bell peppers, diced
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine vegetables and quinoa.
- In a separate bowl, whisk together peanut butter, soy sauce, lime juice, and honey.
- Pour dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
Notes
- Adjust the dressing based on your taste.
- Feel free to add more vegetables.
- Can be served cold or at room temperature.
