- 1 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup coconut milk
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon lime juice
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a bowl, mix peanut butter, soy sauce, honey, coconut milk, garlic, ginger, and lime juice.
- Season diced chicken with salt and pepper.
- Heat a pan over medium heat and add the chicken.
- Cook the chicken until browned and cooked through, about 7-10 minutes.
- Pour the peanut sauce over the chicken and stir to coat.
- Simmer for 5 minutes to heat through.
- Garnish with chopped green onions before serving.
