Instructions
- Prepare the mangoes by peeling and julienning them.
- Shred the carrots and slice the red bell pepper.
- In a large bowl, combine mangoes, carrots, bell pepper, cilantro, and peanuts.
- In a small bowl, whisk together lime juice, fish sauce, sugar, and chili.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 30 minutes before serving.
