Description

Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • Fresh basil leaves for garnish

Instructions

  1. In a large pan, heat the coconut milk over medium heat.
  2. Add the red curry paste and stir until well combined.
  3. Add the chicken pieces and cook until browned.
  4. Stir in the fish sauce, sugar, and chicken broth.
  5. Add bell peppers and broccoli. Cook until vegetables are tender.
  6. Serve hot, garnished with fresh basil leaves.
