Description

A delicious taco rice bowl that combines seasoned rice, beans, and fresh toppings.


Ingredients

  • 1 cup rice
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 2 tablespoons taco seasoning
  • 2 cups water

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, combine rice, water, and taco seasoning.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a separate pan, heat black beans and corn until warm.
  5. Once rice is cooked, fluff with a fork.
