A delicious taco rice bowl that combines seasoned rice, beans, and fresh toppings.
Ingredients

- 1 cup rice
- 1 can black beans, drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 2 tablespoons taco seasoning
- 2 cups water
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, water, and taco seasoning.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a separate pan, heat black beans and corn until warm.
- Once rice is cooked, fluff with a fork.
- In a bowl, layer rice, beans, corn, diced tomatoes, lettuce, cheese, and avocado.
- Serve immediately.

- For extra flavor, add salsa or sour cream.
