Description

Taco potatoes are a hearty and flavorful dish combining baked potatoes with taco toppings.


Ingredients

  • 4 large potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions
  • 1/2 cup black olives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. In a skillet, brown the ground beef over medium heat.
  5. Add the taco seasoning and water as directed on the packet. Cook until heated through.
  6. Slice the baked potatoes open and fluff the insides with a fork.
  7. Spoon the taco beef mixture over the potatoes.
  8. Add cheese, sour cream, tomatoes, green onions, and olives as toppings.
