- 4 large potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup sour cream
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
- 1/2 cup black olives
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for about 45 minutes or until tender.
- In a skillet, brown the ground beef over medium heat.
- Add the taco seasoning and water as directed on the packet. Cook until heated through.
- Slice the baked potatoes open and fluff the insides with a fork.
- Spoon the taco beef mixture over the potatoes.
- Add cheese, sour cream, tomatoes, green onions, and olives as toppings.
Notes
- You can substitute ground turkey for a leaner option.
- Feel free to add other toppings like jalapeños or guacamole.
- These can be made vegetarian by using beans instead of meat.
