Delicious sweet potato rounds topped with creamy goat cheese.
Ingredients

- 2 medium sweet potatoes
- 4 oz goat cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh rosemary, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into round coins about 1/4 inch thick.
- Place sweet potato rounds on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 20 minutes, flipping halfway through.
- Remove from the oven and top with crumbled goat cheese and rosemary.
- Return to the oven and bake for an additional 5 minutes until the cheese is soft.
- Serve warm.
Notes
- For a spicy kick, add red pepper flakes.
- Try using different herbs like thyme or basil.
