Description

Ingredients

  • 2 medium sweet potatoes
  • 4 oz goat cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into round coins about 1/4 inch thick.
  3. Place sweet potato rounds on a baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake for 20 minutes, flipping halfway through.
  6. Remove from the oven and top with crumbled goat cheese and rosemary.
  7. Return to the oven and bake for an additional 5 minutes until the cheese is soft.
  8. Serve warm.
