Description

Sweet Potato Pie Bars are a delightful twist on the classic sweet potato pie, combining rich, creamy sweet potatoes with warm spices in a buttery graham cracker crust.

Ingredients

Scale
  • 2 cups sweet potatoes – Cooked and mashed (about 2 medium sweet potatoes)
  • 1 cup brown sugar – Packed for that rich sweetness
  • 1 teaspoon ground cinnamon – Adds warmth and flavor
  • 1/2 teaspoon ground nutmeg – Complements the cinnamon beautifully
  • 1 teaspoon vanilla extract – Enhances the overall taste
  • 2 large eggs – Binds the filling together
  • 1/2 cup unsalted butter – Melted for a rich texture
  • 1 pre-made graham cracker crust – 9-inch for convenience

Instructions

  1. Prepare the crust by placing a pre-made graham cracker crust in a 9-inch square baking dish or make a homemade crust with crushed graham crackers and melted butter.
  2. In a large mixing bowl, combine the cooked and mashed sweet potatoes with brown sugar, ground cinnamon, ground nutmeg, vanilla extract, and melted butter. Blend until smooth and creamy.
  3. Beat the two large eggs in a separate bowl, then add them to the sweet potato mixture and stir until fully combined.
  4. Pour the creamy filling into the prepared graham cracker crust and spread it evenly.
  5. Preheat the oven to 350°F (175°C) and bake for 30-35 minutes until the edges caramelize and a toothpick inserted in the center comes out clean.
  6. Let the bars cool at room temperature for 15 minutes, then refrigerate for at least 2 hours before cutting into squares and serving.

Notes

  • Choose orange-fleshed sweet potatoes for the best flavor.
  • Baking sweet potatoes enhances their natural sweetness.
  • Store bars in an airtight container in the refrigerator for up to a week.
  • For gluten-free, use a gluten-free graham cracker crust.
  • For vegan, replace eggs with a flaxseed or chia seed mixture and use vegan butter.
