A nutritious and hearty bowl featuring sweet potatoes and kale.
Ingredients
Scale
- 2 medium sweet potatoes, diced
- 1 bunch kale, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 can chickpeas, drained and rinsed
- 1 avocado, sliced
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced sweet potatoes with olive oil, garlic powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- While sweet potatoes roast, heat a pan over medium heat.
- Add the chopped kale and sauté until wilted, about 5 minutes.
- In a bowl, combine roasted sweet potatoes, sautéed kale, and chickpeas.
- Top with sliced avocado and drizzle with lemon juice.
Notes
- Store leftovers in an airtight container in the fridge.
- You can add your choice of protein for extra nutrition.
