Description

A nutritious and hearty bowl featuring sweet potatoes and kale.


Ingredients

Scale
  • 2 medium sweet potatoes, diced
  • 1 bunch kale, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 can chickpeas, drained and rinsed
  • 1 avocado, sliced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, garlic powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. While sweet potatoes roast, heat a pan over medium heat.
  5. Add the chopped kale and sauté until wilted, about 5 minutes.
  6. In a bowl, combine roasted sweet potatoes, sautéed kale, and chickpeas.
  7. Top with sliced avocado and drizzle with lemon juice.
