- 2 large sweet potatoes, peeled and diced
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add sweet potatoes and cook until tender.
- In a bowl, whisk eggs, milk, salt, pepper, and paprika.
- Combine cooked sweet potatoes with egg mixture and pour into a greased baking dish.
- Sprinkle cheese on top.
- Bake for 25-30 minutes or until eggs are set.
Notes
- Let it cool before serving.
- Store leftovers in the refrigerator.
