Ingredients

  • 2 large sweet potatoes, peeled and diced

  • 1 cup milk
  • 1 cup shredded cheese

  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add sweet potatoes and cook until tender.
  3. In a bowl, whisk eggs, milk, salt, pepper, and paprika.
  4. Combine cooked sweet potatoes with egg mixture and pour into a greased baking dish.
  5. Sprinkle cheese on top.
  6. Bake for 25-30 minutes or until eggs are set.
