Sweet Potato Black Bean Tacos are a delightful experience combining roasted sweet potatoes and hearty black beans, creating a nutritious and delicious dish.

  • 2 medium sweet potatoes (about 500 grams), peeled and diced
  • 1 can (15 oz or 425 grams) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into small cubes and toss them with olive oil, cumin, smoked paprika, chili powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  4. In a small saucepan, heat the black beans over medium heat, seasoning with salt and pepper for 5-7 minutes.
  5. Warm the corn tortillas in a skillet or microwave.
