A flavorful and easy chicken dish cooked in a crockpot with a sweet Hawaiian twist.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 bell pepper, sliced
- 2 green onions, chopped
Instructions
- Place chicken breasts in the crockpot.
- Add pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Stir to combine all ingredients.
- Add sliced bell pepper on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks.
- Serve over rice and garnish with green onions.
Notes
- Adjust sweetness by adding more or less brown sugar.
- Serve with steamed vegetables for a complete meal.
- Store leftovers in the refrigerator for up to 3 days.
