Description

A delightful meal that combines tender chicken, fresh vegetables, and juicy pineapple with a perfect balance of sweet and spicy flavors.

Ingredients

Scale
  • 500 grams (1 lb) chicken breast, cut into bite-sized pieces
  • 1 tablespoon vegetable oil (for cooking)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili sauce (adjust to taste)
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. Chop the vegetables: slice the bell peppers and mince the garlic and ginger.
  3. Make the sauce by whisking together soy sauce, honey, rice vinegar, and chili sauce.
  4. Cook the chicken in a skillet with vegetable oil until browned and cooked through, then set aside.
  5. Stir-fry the garlic, ginger, bell peppers, and pineapple in the same skillet until tender-crisp.
  6. Combine the chicken with the vegetables and pour the sauce over, cooking for an additional 2-3 minutes.
  7. Serve hot over cooked rice or noodles, garnished with sesame seeds.

Notes

  • Marinate the chicken for 30 minutes for deeper flavor.
  • Use high heat for quick cooking to lock in moisture.
  • Add vegetables in stages based on cooking time.
  • Store leftovers in an airtight container for up to three days.
  • Freeze for up to three months if needed.
