- 2 cups corn, fresh or frozen
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tsp chili powder
- 1 tsp lime juice
- 1/2 cup cotija cheese, crumbled
- 2 tbsp cilantro, chopped
- Salt and pepper to taste
Instructions
- Cook the shrimp in a skillet over medium heat until pink, about 3-4 minutes.
- Add corn and cook for an additional 2 minutes.
- In a bowl, mix mayonnaise, sour cream, chili powder, lime juice, salt, and pepper.
- Combine the shrimp and corn with the sauce.
- Top with cotija cheese and cilantro before serving.
Notes
- Use fresh corn for the best flavor.
- Adjust spice level by adding more chili powder if desired.
