Description

A refreshing pasta salad with street corn flavors.


Ingredients

Scale
  • 2 cups pasta
  • 1 cup corn kernels
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine corn, tomatoes, onion, and cilantro.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  5. Pour dressing over the pasta salad and toss to combine.
  6. Sprinkle feta cheese on top and serve.

Notes

  • Can add avocado for creaminess.
