Description
A refreshing pasta salad with street corn flavors.
Ingredients

- 2 cups pasta
- 1 cup corn kernels
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine corn, tomatoes, onion, and cilantro.
- Add the cooled pasta to the vegetable mixture.
- In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
- Pour dressing over the pasta salad and toss to combine.
- Sprinkle feta cheese on top and serve.
Notes
- Can add avocado for creaminess.
- Best served cold.
- Can be made a day in advance.
