Description

Strawberry Pretzel Icebox Pie is a classic no-bake dessert that combines a crunchy, buttery pretzel crust with a creamy cream cheese filling and a fresh, fruity strawberry topping. It perfectly balances sweet and salty flavors, making it an ideal treat for warm days, celebrations, or potlucks.

Ingredients

Scale
  • 2 cups pretzel crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for crust)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup water
  • 1 tablespoon unflavored gelatin
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Mix pretzel crumbs, melted butter, and 1/4 cup granulated sugar until combined. Press firmly into a 9-inch pie pan. Bake for 10 minutes, then cool completely.
  2. Beat softened cream cheese until smooth. Gradually add powdered sugar, mixing well.
  3. In a separate bowl, whip heavy cream with vanilla extract until stiff peaks form. Gently fold into cream cheese mixture. Spread evenly over cooled crust. Chill for at least 2 hours.
  4. Bloom gelatin in water for 5 minutes, then heat gently until dissolved. Stir in 1/4 cup granulated sugar and lemon juice. Toss sliced strawberries in the mixture.
  5. Spoon strawberries evenly over the chilled filling. Refrigerate for an additional 30 minutes until set. Slice and serve.

Notes

  • Use fresh, ripe strawberries for the best flavor.
  • For a gluten-free version, substitute gluten-free pretzels for regular pretzels.
  • Ensure the crust is fully cooled before adding the filling to avoid melting.
  • You can prepare the pie a day ahead; add the strawberry topping just before serving for best presentation.
  • Alternative fruits like blueberries, raspberries, or peaches can be used instead of strawberries.
