Delicious strawberry cheesecake bars with a creamy filling and a graham cracker crust.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a greased 9×9 inch pan.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in chopped strawberries.
- Pour the cream cheese mixture over the crust.
- Bake for 30-35 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours before cutting.
Notes
- Use fresh strawberries for best flavor.
- Store leftovers in the refrigerator.
- Bars can be topped with additional strawberries before serving.
