Ingredients

- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1 cup cashews
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add mixed vegetables, stir-fry for 5-7 minutes.
- Add cashews and soy sauce, cook for another 2 minutes.
- Season with salt and pepper to taste.
- Serve hot.
