  • 250ml (1 cup) boiling water
  • 2 medium apples, peeled, cored, and diced
  • 100g (1/2 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200g (1 ½ cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 100ml (1/2 cup) milk

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
  2. In a bowl, combine the chopped dates with boiling water. Let them soak for about 15 minutes until softened. After soaking, mash them slightly with a fork to create a chunky paste.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.
  6. Gently fold in the diced apples and the mashed date mixture until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature, optionally drizzled with a little extra vanilla sauce or cream.
