Description

Sticky Apple & Date Butter Pudding with Hot Caramel is a warm, comforting dessert that combines sweet dates and apples in a rich pudding. It’s topped with a luscious caramel sauce for an indulgent finish.

  • 250ml (1 cup) boiling water
  • 1 teaspoon baking soda
  • 100g (1/2 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200g (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 medium apples, peeled, cored, and diced (preferably Granny Smith or similar)
  • 100g (1/2 cup) chopped walnuts or pecans (optional)
  • 150g (3/4 cup) granulated sugar (for caramel sauce)
  • 50g (1/4 cup) unsalted butter (for caramel sauce)
  • 120ml (1/2 cup) heavy cream (for caramel sauce)
  • A pinch of salt (for caramel sauce)

Instructions

  1. Prepare the dates: In a bowl, combine the chopped dates with the boiling water and baking soda. Let it sit for about 15 minutes to soften the dates.
  2. Preheat the oven: Preheat your oven to 180°C (350°F). Grease a 20cm (8-inch) square baking dish or similar size with butter.
  3. Cream the butter and sugar: In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy. This should take about 3-4 minutes.
  4. Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  5. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Mix everything together: Gradually add the dry ingredients to the butter mixture, alternating with the date mixture (including the water). Mix until just combined. Fold in the diced apples and nuts if using.
  7. Bake the pudding: Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the center comes out clean.
  8. Make the hot caramel sauce: While the pudding is baking, prepare the caramel sauce. In a saucepan over medium heat, combine the granulated sugar and butter. Stir until the sugar dissolves and the mixture begins to bubble. Slowly add the heavy cream while stirring continuously. Be careful as the mixture will bubble up. Continue to cook for another 2-3 minutes until thickened. Add a pinch of salt and remove from heat.
