Description
A classic steakhouse-style potato salad with a creamy dressing and fresh herbs.
Ingredients

- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup celery, chopped
- 1/2 cup red onion, chopped
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Pepper to taste
Instructions
- Boil the diced potatoes until tender, about 15 minutes.
- Drain and let cool.
- In a bowl, mix mayonnaise, mustard, salt, and pepper.
- Add cooled potatoes, celery, red onion, and parsley to the bowl.
- Toss everything gently to combine.
- Refrigerate for at least 1 hour before serving.
Notes
- Adjust seasoning to your taste.
- Can be made a day in advance.
- For extra flavor, add crumbled bacon.
