Description
A fresh and light salad inspired by spring rolls.
Ingredients

- 1 cup rice noodles
- 2 cups mixed greens
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1/2 cup bell peppers, sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
Instructions
- Cook the rice noodles according to package instructions.
- Rinse the noodles under cold water and drain.
- In a large bowl, combine mixed greens, carrots, cucumber, and bell peppers.
- Add the cooled rice noodles to the bowl.
- Toss in mint and cilantro leaves.
- In a small bowl, whisk together sesame oil, soy sauce, and lime juice.
- Pour the dressing over the salad and mix well.
- Serve immediately or chill before serving.
Notes
- Customize with other vegetables as desired.
- Great as a side dish or light main meal.
