Description

A fresh and light salad inspired by spring rolls.


Ingredients

  • 1 cup rice noodles
  • 2 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1/2 cup bell peppers, sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice

Instructions

  1. Cook the rice noodles according to package instructions.
  2. Rinse the noodles under cold water and drain.
  3. In a large bowl, combine mixed greens, carrots, cucumber, and bell peppers.
  4. Add the cooled rice noodles to the bowl.
  5. Toss in mint and cilantro leaves.
  6. In a small bowl, whisk together sesame oil, soy sauce, and lime juice.
  7. Pour the dressing over the salad and mix well.
  8. Serve immediately or chill before serving.
