Description

A hearty and healthy breakfast skillet featuring spinach and mushrooms.


Ingredients

  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • 2 large eggs
  • Salt to taste
  • Pepper to taste
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms and sauté until tender.
  3. Add fresh spinach and cook until wilted.
  4. Push the vegetables to one side of the skillet.
  5. Crack the eggs into the empty side of the skillet.
  6. Cook eggs to your desired doneness.
  7. Season with salt and pepper.
  8. If desired, sprinkle cheese on top before serving.
