Ingredients

- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- 2 large eggs
- Salt to taste
- Pepper to taste
- 1/4 cup shredded cheese (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced mushrooms and sauté until tender.
- Add fresh spinach and cook until wilted.
- Push the vegetables to one side of the skillet.
- Crack the eggs into the empty side of the skillet.
- Cook eggs to your desired doneness.
- Season with salt and pepper.
- If desired, sprinkle cheese on top before serving.

- Use any type of cheese you prefer.
- Feel free to add other vegetables.
