Description

Spinach feta quesadillas are a delightful twist on the classic quesadilla, combining rich feta cheese with fresh spinach in a warm tortilla.


Ingredients

  • 4 flour tortillas (8-inch)
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper (or to taste)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat and sauté minced garlic for about 1 minute.
  2. Add chopped spinach and cook for 2-3 minutes until wilted, then remove from heat and let cool slightly.
  3. In a medium bowl, combine wilted spinach with crumbled feta, shredded mozzarella, and black pepper.
  4. Place a tortilla in the skillet, spoon the spinach and cheese mixture onto one half, and fold the tortilla over.
  5. Cook the quesadilla for 3-4 minutes on each side until golden brown and crispy.
  6. Remove from skillet, let cool for a minute, slice into wedges, and serve warm with dipping sauce.
