- 4 flour tortillas (8-inch)
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper (or to taste)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat and sauté minced garlic for about 1 minute.
- Add chopped spinach and cook for 2-3 minutes until wilted, then remove from heat and let cool slightly.
- In a medium bowl, combine wilted spinach with crumbled feta, shredded mozzarella, and black pepper.
- Place a tortilla in the skillet, spoon the spinach and cheese mixture onto one half, and fold the tortilla over.
- Cook the quesadilla for 3-4 minutes on each side until golden brown and crispy.
- Remove from skillet, let cool for a minute, slice into wedges, and serve warm with dipping sauce.

- Consider adding bell peppers, onions, or herbs for extra flavor.
- Use whole wheat or corn tortillas for a healthier option.
