- 1/4 teaspoon black pepper
- 8 small corn tortillas
- 1 cup red cabbage, finely shredded
- 1/2 cup carrots, grated
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons lime juice, freshly squeezed
- Lime wedges, for serving
Instructions
- In a medium bowl, combine shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Toss to coat and marinate for 15-20 minutes.
- In a separate bowl, mix red cabbage, grated carrots, and chopped cilantro. Add mayonnaise and lime juice, stir to combine, and season with salt and pepper.
- Warm corn tortillas in a skillet for about 30 seconds on each side.
- Heat a large skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until pink and opaque.
- Assemble tacos by placing shrimp in tortillas and topping with lime slaw and fresh cilantro.
