  • 1 lb (450 g) shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup red cabbage, finely shredded
  • 1/2 cup carrots, grated
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice, freshly squeezed
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, combine shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Toss to coat and marinate for 15-20 minutes.
  2. In a separate bowl, mix red cabbage, grated carrots, and chopped cilantro. Add mayonnaise and lime juice, stir to combine, and season with salt and pepper.
  3. Warm corn tortillas in a skillet for about 30 seconds on each side.
  4. Heat a large skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until pink and opaque.
  5. Assemble tacos by placing shrimp in tortillas and topping with lime slaw and fresh cilantro.
