Ingredients

- 2 cups corn kernels
- 1/2 cup flour
- 1/4 cup cornmeal
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped cilantro
- 1/4 cup diced jalapeños
- 2 eggs
- 1/4 cup milk
- Oil for frying
Instructions
- In a bowl, combine corn, flour, cornmeal, chili powder, cumin, salt, and pepper.
- Add cilantro, jalapeños, eggs, and milk. Mix until combined.
- Heat oil in a frying pan over medium heat.
- Scoop tablespoon-sized portions of the mixture and fry until golden brown.
- Drain on paper towels and serve hot.
Notes
- Adjust the spice level by adding more or less jalapeños.
- Serve with sour cream or salsa for dipping.
