Ingredients

- 2 lbs chicken thighs
- 1/2 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon sriracha
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 cup coconut milk
- 1 cup jasmine rice
- 2 cups water
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix maple syrup, soy sauce, sriracha, garlic powder, and ginger powder.
- Coat chicken thighs with the sauce and place them on a baking sheet.
- Bake chicken for 25-30 minutes until cooked through.
- Meanwhile, rinse jasmine rice under cold water.
- In a pot, combine rice, coconut milk, water, and a pinch of salt.
- Bring to a boil, then reduce heat and cover. Cook for 15 minutes.
- Fluff rice with a fork and let it sit for 5 minutes.
- Serve chicken over coconut rice and drizzle with remaining sauce.
Notes
- Adjust sriracha based on your spice preference.
- Marinate chicken for a few hours for better flavor.
