Instructions
- Gather all your ingredients and prepare them by draining and rinsing the chickpeas, chopping the onion, mincing the garlic, and grating the ginger.
- In a large pot or skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the spices: curry powder, ground cumin, ground coriander, and cayenne pepper. Stir well and toast for about a minute.
- Pour in the diced tomatoes and drained chickpeas, stirring everything together. Let it simmer for about 5 minutes.
- Add the coconut milk and bring the mixture to a gentle simmer. Cook for about 10 minutes, allowing the flavors to meld.
- Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.
- Serve warm, garnished with fresh cilantro and accompanied by naan bread.
