  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 cups fresh spinach, washed and roughly chopped
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Naan bread (for serving)

Instructions

  1. Gather all your ingredients and prepare them by draining and rinsing the chickpeas, chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large pot or skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the spices: curry powder, ground cumin, ground coriander, and cayenne pepper. Stir well and toast for about a minute.
  5. Pour in the diced tomatoes and drained chickpeas, stirring everything together. Let it simmer for about 5 minutes.
  6. Add the coconut milk and bring the mixture to a gentle simmer. Cook for about 10 minutes, allowing the flavors to meld.
  7. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh cilantro and accompanied by naan bread.
