Description

Spicy Chickpea Cauliflower tacos served in lettuce wraps.


Ingredients

Scale
  • 1 can chickpeas, drained and rinsed
  • 1 head cauliflower, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • Fresh lettuce leaves for wrapping
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix chickpeas, cauliflower, olive oil, chili powder, cumin, garlic powder, and salt.
  3. Spread the mixture on a baking sheet.
  4. Bake for 25-30 minutes until golden and crispy.
  5. Remove from oven and let cool slightly.
  6. Place the chickpea cauliflower mixture in lettuce leaves.
  7. Top with avocado slices and cilantro.
  8. Serve immediately.

Notes

  • This dish is gluten-free.
  • Adjust spice level by adding more or less chili powder.
  • Add lime juice for extra flavor.
