Description
Spicy Chickpea Cauliflower tacos served in lettuce wraps.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 head cauliflower, chopped
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt to taste
- Fresh lettuce leaves for wrapping
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix chickpeas, cauliflower, olive oil, chili powder, cumin, garlic powder, and salt.
- Spread the mixture on a baking sheet.
- Bake for 25-30 minutes until golden and crispy.
- Remove from oven and let cool slightly.
- Place the chickpea cauliflower mixture in lettuce leaves.
- Top with avocado slices and cilantro.
- Serve immediately.
Notes
- This dish is gluten-free.
- Adjust spice level by adding more or less chili powder.
- Add lime juice for extra flavor.
