Ingredients

  • Ramen noodles: 200 grams (or 7 oz)
  • Chicken breast: 300 grams (or 10.5 oz), diced
  • Chili paste: 2 tablespoons (adjust to taste)
  • Garlic: 3 cloves, minced
  • Ginger: 1 tablespoon, grated
  • Soy sauce: 3 tablespoons
  • Coconut milk: 1 cup (or 240 ml)
  • Scallions: 2, chopped (for garnish)
  • Sesame seeds: 2 tablespoons (for garnish)
  • Olive oil: 1 tablespoon (for cooking)
  • Salt and pepper: to taste

Instructions

  1. Dice the chicken breast into bite-sized pieces and season with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and cook the chicken for 5-7 minutes until golden brown.
  3. In a large pot, bring water to a boil and cook the ramen noodles according to package instructions (3-5 minutes). Drain and set aside.
  4. In the same skillet, sauté minced garlic and grated ginger for 1-2 minutes until fragrant.
  5. Add chili paste and soy sauce, then stir in coconut milk and let the sauce simmer for 3-5 minutes.
  6. Return the cooked chicken to the skillet, add the drained ramen noodles, and toss everything together gently.
  7. Cook for an additional 2-3 minutes to heat through, then serve in bowls garnished with scallions and sesame seeds.
