Ingredients
- Ramen noodles: 200 grams (or 7 oz)
- Chicken breast: 300 grams (or 10.5 oz), diced
- Chili paste: 2 tablespoons (adjust to taste)
- Garlic: 3 cloves, minced
- Ginger: 1 tablespoon, grated
- Soy sauce: 3 tablespoons
- Coconut milk: 1 cup (or 240 ml)
- Scallions: 2, chopped (for garnish)

- Olive oil: 1 tablespoon (for cooking)

Instructions
- Dice the chicken breast into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and cook the chicken for 5-7 minutes until golden brown.
- In a large pot, bring water to a boil and cook the ramen noodles according to package instructions (3-5 minutes). Drain and set aside.

- Add chili paste and soy sauce, then stir in coconut milk and let the sauce simmer for 3-5 minutes.
- Return the cooked chicken to the skillet, add the drained ramen noodles, and toss everything together gently.
- Cook for an additional 2-3 minutes to heat through, then serve in bowls garnished with scallions and sesame seeds.
