Instructions
- Prepare the dough by mixing flour, salt, and brown sugar, then incorporating chilled butter until it resembles coarse crumbs.
- Gradually add ice-cold water until the dough comes together, then form it into a disk and refrigerate for at least 30 minutes.
- Prepare the pear filling by tossing sliced pears with brown sugar, cinnamon, nutmeg, and salt, allowing it to sit for a few minutes.
- Roll out the chilled dough into a rough circle and transfer it to a parchment-lined baking sheet.
- Arrange the pear mixture in the center of the dough, fold the edges over the filling, and crimp to secure.
- Brush the crust with beaten egg and bake in a preheated oven at 400°F (200°C) for 35-40 minutes until golden brown.
- Cool for 10 minutes before slicing and serving warm, optionally with vanilla ice cream or whipped cream.
