  • Ground nutmeg: ¼ teaspoon
  • Salt: ¼ teaspoon
  • Egg: 1, beaten (for egg wash)
  • Water: 2-3 tablespoons (ice-cold, for dough)

Instructions

  1. Prepare the dough by mixing flour, salt, and brown sugar, then incorporating chilled butter until it resembles coarse crumbs.
  2. Gradually add ice-cold water until the dough comes together, then form it into a disk and refrigerate for at least 30 minutes.
  3. Prepare the pear filling by tossing sliced pears with brown sugar, cinnamon, nutmeg, and salt, allowing it to sit for a few minutes.
  4. Roll out the chilled dough into a rough circle and transfer it to a parchment-lined baking sheet.
  5. Arrange the pear mixture in the center of the dough, fold the edges over the filling, and crimp to secure.
