Description

A delicious and hearty Southwestern breakfast casserole perfect for gatherings.


Ingredients

  • 12 eggs
  • 1 cup milk
  • 1 lb breakfast sausage
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 can black beans, drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage until browned.
  3. Add the bell peppers and onions; sauté until softened.
  4. In a bowl, whisk together eggs, milk, cumin, chili powder, salt, and pepper.
  5. In a greased baking dish, combine sausage mixture, black beans, and half of the cheese.
  6. Pour the egg mixture over the top.
  7. Sprinkle remaining cheese on top.
  8. Bake for 30-35 minutes, or until the eggs are set.

Notes

  • Let cool for a few minutes before serving.
