Ingredients

  • 2 cups black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced red bell pepper
  • 1 cup diced green onion
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package eggroll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix black beans, corn, bell pepper, green onion, cheese, cumin, and chili powder.
  2. Place a spoonful of the mixture on each eggroll wrapper.
  3. Roll the wrapper tightly, sealing the edges with water.
  4. Heat oil in a frying pan over medium heat.
  5. Fry the eggrolls until golden brown on all sides.
  6. Remove and drain on paper towels.
