Description
Crispy southwest egg rolls filled with chicken, black beans, corn, and cheese.
Ingredients

- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, canned or frozen
- 1 cup shredded cheese
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a bowl, mix chicken, black beans, corn, cheese, bell pepper, green onions, cumin, and chili powder.
- Place a spoonful of filling in the center of each egg roll wrapper.
- Fold the wrapper over the filling and seal the edges with water.
- Heat oil in a pan over medium heat.
- Fry the egg rolls until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve with salsa or your favorite dipping sauce.
Notes
- Feel free to add your favorite spices.
- These can be baked for a healthier option.
- Store leftovers in an airtight container in the fridge.
