Description

Crispy southwest egg rolls filled with chicken, black beans, corn, and cheese.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, canned or frozen
  • 1 cup shredded cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix chicken, black beans, corn, cheese, bell pepper, green onions, cumin, and chili powder.
  2. Place a spoonful of filling in the center of each egg roll wrapper.
  3. Fold the wrapper over the filling and seal the edges with water.
  4. Heat oil in a pan over medium heat.
  5. Fry the egg rolls until golden brown, about 3-4 minutes on each side.
  6. Remove and drain on paper towels.
  7. Serve with salsa or your favorite dipping sauce.
