Southwest Egg Rolls are a delicious appetizer filled with veggies and spices.
Ingredients

- 1 cup black beans, rinsed and drained
- 1 cup corn, drained
- 1 cup bell peppers, diced
- 1 cup spinach, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup cheese, shredded
- 8 egg roll wrappers
- Oil for frying
Instructions
- In a bowl, mix black beans, corn, bell peppers, spinach, cumin, chili powder, and cheese.
- Place a spoonful of the mixture onto an egg roll wrapper.
- Fold the wrapper and seal the edges with water.
- Heat oil in a pan over medium heat.
- Fry the egg rolls until golden brown on all sides.
- Drain on paper towels and serve hot.
Notes
- Serve with salsa or sour cream.
- Can be baked instead of fried for a healthier option.
