Description

Southwest Egg Rolls are a delicious appetizer filled with veggies and spices.


Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheese, shredded
  • 8 egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix black beans, corn, bell peppers, spinach, cumin, chili powder, and cheese.
  2. Place a spoonful of the mixture onto an egg roll wrapper.
  3. Fold the wrapper and seal the edges with water.
  4. Heat oil in a pan over medium heat.
  5. Fry the egg rolls until golden brown on all sides.
  6. Drain on paper towels and serve hot.
