Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, frozen or canned
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green onions, chopped
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix chicken, black beans, corn, red bell pepper, green onions, cheese, cumin, and chili powder.
  2. Lay an egg roll wrapper on a clean surface.
  3. Place 2 tablespoons of the filling in the center of the wrapper.
  4. Fold the sides over the filling and roll tightly.
  5. Seal the edges with water.
  6. Heat oil in a pan over medium heat.
  7. Fry the egg rolls until golden brown on all sides.
  8. Drain on paper towels and serve with your favorite dipping sauce.
