A delicious appetizer filled with southwest flavors.
Ingredients

- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, frozen or canned
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, chopped
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a bowl, mix chicken, black beans, corn, red bell pepper, green onions, cheese, cumin, and chili powder.
- Lay an egg roll wrapper on a clean surface.
- Place 2 tablespoons of the filling in the center of the wrapper.
- Fold the sides over the filling and roll tightly.
- Seal the edges with water.
- Heat oil in a pan over medium heat.
- Fry the egg rolls until golden brown on all sides.
- Drain on paper towels and serve with your favorite dipping sauce.
Notes
- Adjust spices to taste.
- Can bake instead of fry for a healthier option.
- Serve with salsa or guacamole.
