Southern style honey butter cornbread poppers are small, fluffy bites of cornbread with a sweet honey butter topping.
Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup honey
Instructions
- Preheat the oven to 400°F (200°C).
- Grease a mini muffin tin.
- In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, eggs, melted butter, and honey.
- Combine wet and dry ingredients until just mixed.
- Pour the batter into the mini muffin tin.
- Bake for 15-20 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Store leftovers in an airtight container.
- Reheat in the oven for best results.
- You can adjust the honey to taste.
