- 1/2 cup buttermilk
- 1 cup granulated sugar (for toffee)
- 1/2 cup unsalted butter (for toffee)
- 1/4 cup heavy cream (for toffee)
- 1 teaspoon vanilla extract (for toffee)
- Pinch of salt (for toffee)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
- Gently fold in the diced apples and chopped dates until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
- In a saucepan over medium heat, combine the granulated sugar and butter. Stir until melted and boiling. Allow to boil for 3-4 minutes without stirring until it turns a light amber color. Remove from heat and stir in heavy cream, vanilla extract, and a pinch of salt. Let cool slightly before drizzling over the cooled cake.
- Once the cake is completely cooled, drizzle the vanilla toffee over the top. Slice and serve.
Notes
- For added flavor, consider adding chopped nuts such as walnuts or pecans to the batter.
- This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
