Description

  • 1 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples, peeled and diced (about 2 medium apples)
  • 1 cup pitted dates, chopped
  • 1/2 cup buttermilk
  • 1 cup granulated sugar (for toffee)
  • 1/2 cup unsalted butter (for toffee)
  • 1/4 cup heavy cream (for toffee)
  • 1 teaspoon vanilla extract (for toffee)
  • Pinch of salt (for toffee)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  6. Gently fold in the diced apples and chopped dates until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
  8. In a saucepan over medium heat, combine the granulated sugar and butter. Stir until melted and boiling. Allow to boil for 3-4 minutes without stirring until it turns a light amber color. Remove from heat and stir in heavy cream, vanilla extract, and a pinch of salt. Let cool slightly before drizzling over the cooled cake.
  9. Once the cake is completely cooled, drizzle the vanilla toffee over the top. Slice and serve.

  • For added flavor, consider adding chopped nuts such as walnuts or pecans to the batter.
  • This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
