- 1 pound of carrots
- 2 tablespoons of olive oil

- 1 tablespoon of fresh herbs (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and trim the carrots.
- Boil the carrots in salted water for 10 minutes.
- Drain the carrots and place them on a baking sheet.
- Smash each carrot with a fork or the bottom of a glass.
- Drizzle olive oil over the smashed carrots.
- Season with salt and pepper.
- Bake for 20-25 minutes until golden and crispy.
