A hearty slow cooker Hungarian goulash with tender beef and rich flavors.
Ingredients

- 2 lbs beef chuck, cut into cubes
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 bell pepper, chopped
- 3 carrots, sliced
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper.
- In the slow cooker, combine beef, onions, garlic, paprika, and caraway seeds.
- Add bell pepper, carrots, beef broth, and diced tomatoes.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve hot with bread or noodles.
Notes
- Adjust seasoning to taste before serving.
- For a thicker sauce, remove the lid for the last hour of cooking.
