- 4 boneless, skinless chicken breasts
- 1 can (15 oz) diced tomatoes
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add diced tomatoes, chicken broth, garlic powder, onion powder, salt, and pepper.
- Cover and cook on low for 4-6 hours.
- Remove the chicken and shred it.
- Stir in heavy cream and Parmesan cheese into the slow cooker.
- Add shredded chicken and basil back to the slow cooker.
- Mix well and cook for an additional 30 minutes on low.
Notes
- Serve with pasta or rice for a complete meal.
- Can substitute heavy cream with coconut milk for a lighter option.
