Description

A hearty slow cooker chicken and sweet potato chili.


Ingredients

  • 2 lbs chicken breast
  • 2 large sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Place chicken breast in the slow cooker.
  2. Add diced sweet potatoes, black beans, diced tomatoes, onion, and garlic.
  3. Pour in chicken broth.
  4. Stir in chili powder, cumin, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred chicken before serving and mix well.
