A hearty slow cooker chicken and sweet potato chili.

- 2 lbs chicken breast
- 2 large sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Place chicken breast in the slow cooker.
- Add diced sweet potatoes, black beans, diced tomatoes, onion, and garlic.
- Pour in chicken broth.
- Stir in chili powder, cumin, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken before serving and mix well.
