Ingredients
- Beef Chuck: 1.5 lbs (680 g) cut into 1-inch cubes
- Chickpeas: 1 can (15 oz or 425 g), drained and rinsed
- Onions: 2 medium, chopped
- Garlic: 3 cloves, minced
- Carrots: 2 medium, sliced
- Bell Peppers: 1 red and 1 yellow, chopped
- Diced Tomatoes: 1 can (14 oz or 400 g) with juices
- Beef Broth: 2 cups
- Olive Oil: 2 tablespoons
- Spices: Ground cumin, ground coriander, ground cinnamon, paprika, and cayenne pepper (optional)
- Salt and Pepper: To taste
- Fresh Cilantro: For garnish
Instructions
- Prepare all ingredients by cutting the beef, chopping the onions, slicing the carrots, and chopping the bell peppers.
- Heat olive oil in a skillet and brown the beef cubes on all sides, then transfer to the slow cooker.
- Sauté onions and garlic in the same skillet, then add carrots and bell peppers before transferring to the slow cooker.
- Add chickpeas, diced tomatoes, beef broth, and spices to the slow cooker and stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- Serve garnished with fresh cilantro and enjoy with couscous or bread.
