Description

A flavorful and aromatic dish made with beef, chickpeas, and a blend of spices, cooked slowly to enhance the flavors.


Ingredients

  • Beef Chuck: 1.5 lbs (680 g) cut into 1-inch cubes
  • Chickpeas: 1 can (15 oz or 425 g), drained and rinsed
  • Onions: 2 medium, chopped
  • Garlic: 3 cloves, minced
  • Carrots: 2 medium, sliced
  • Bell Peppers: 1 red and 1 yellow, chopped
  • Diced Tomatoes: 1 can (14 oz or 400 g) with juices
  • Beef Broth: 2 cups
  • Olive Oil: 2 tablespoons
  • Spices: Ground cumin, ground coriander, ground cinnamon, paprika, and cayenne pepper (optional)
  • Salt and Pepper: To taste
  • Fresh Cilantro: For garnish

Instructions

  1. Prepare all ingredients by cutting the beef, chopping the onions, slicing the carrots, and chopping the bell peppers.
  2. Heat olive oil in a skillet and brown the beef cubes on all sides, then transfer to the slow cooker.
  3. Sauté onions and garlic in the same skillet, then add carrots and bell peppers before transferring to the slow cooker.
  4. Add chickpeas, diced tomatoes, beef broth, and spices to the slow cooker and stir well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  6. Serve garnished with fresh cilantro and enjoy with couscous or bread.
