A light and flavorful dish combining shrimp, lemon, garlic, and orzo pasta.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp and cook until pink, about 3-4 minutes.
- Remove shrimp and set aside.
- In the same pot, add orzo and vegetable broth.
- Bring to a boil, then reduce heat and simmer until orzo is tender.
- Stir in lemon juice and zest.
- Add cooked shrimp back to the pot and mix well.
- Season with salt and pepper.
- Garnish with parsley before serving.
Notes
- For a spicier kick, add red pepper flakes.
- Use chicken broth for a richer flavor.
- Can be served warm or chilled as a salad.
