Description

A light and flavorful dish combining shrimp, lemon, garlic, and orzo pasta.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Remove shrimp and set aside.
  5. In the same pot, add orzo and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer until orzo is tender.
  7. Stir in lemon juice and zest.
  8. Add cooked shrimp back to the pot and mix well.
  9. Season with salt and pepper.
  10. Garnish with parsley before serving.

Notes

  • For a spicier kick, add red pepper flakes.
  • Use chicken broth for a richer flavor.
  • Can be served warm or chilled as a salad.
