- 1 pound shrimp, peeled and deveined
- 1/4 cup vegetable oil
- 1/4 cup flour
- 1 onion, diced
- 1 green bell pepper, diced
- 1 celery stalk, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat the oil in a large pot over medium heat.
- Add flour and stir to make a roux, cooking until brown.
- Stir in the onion, bell pepper, celery, and garlic; cook until softened.
- Add shrimp, chicken broth, diced tomatoes, and Cajun seasoning; bring to a simmer.
- Cook for 10-15 minutes until shrimp are cooked through.
- Season with salt and pepper to taste.
- Serve over cooked rice.

- Can add other seafood like crab or crawfish.
